Vegetables

The instant pot can be great for cooking vegetables, especially those that usually take a while, like potatoes. The instant pot is also handy for cooking frozen vegetables – and these contain just as many nutrients as fresh veg, if not more!

The instructions below should help you cook most types of vegetables in the instant pot:

  • Most vegetables are cooked best using the steaming method. Steaming preserves vitamins in the food and also stops them going soggy and losing all of their colour
  • To steam, add at least one cup of water (250ml) to the instant pot
  • Place a trivet in the instant pot and place a steel or ovenproof bowl on top
  • Add your vegetables to the bowl
  • For larger vegetables, you can usually get away with putting them directly on the trivet
  • Using manual mode, set the pressure cooker to the correct time and make sure you have the pressure valve closed
  • You should do a quick release for vegetables to stop them going soggy once the cooking time is complete – but be careful, as the steam will be really hot. Like, REALLY hot.
